This recipe was perhaps the top favorite in our family decades ago, and indeed was quite popular in the school cafeterias of eastern Wisconsin during the 1960’s where I grew up. It appeared in a cookbook published in 1960 by the Porter-Scarpelli Macaroni Co. titled Specialties of the House: Cook Book of Durum Wheat Main Dishes. However, our collective family memory puts this dish on our dining table earlier than that.\r\nObviously Mexican spaghetti is a misnomer and perhaps can be attributed only to the inclusion of tomato and green pepper. \r\nHere is the recipe as presented in the 1960 cookbook\r\n\r\n
