Miso Soup

Description
Not actually a Wisconsin Soup, Miso Soup is warm and soothing on a cold day; refreshing on a hot day. This basic soup can be varied by adding grains or noodles.
Ingredients
  • A few pieces of arame or wakame seaweed, soaked in enough water to cover for 5 minutes.
  • 2 tsp. sesame oil
  • 6 oz finely chopped vegetables (cabbage, celery, carrots, rutabaga, turnip)
  • 2 tsp grated fresh gingerroot
  • 4 1/2 c. water
  • 4 Tbsp. dark miso
  • 2 Tbsp fresh parsley or cilantro leaves
Preparation
  1. Measure and prepare ingredients as directed.
Instructions
  1. 1) Drain the arame or wakame seaweed and cut into 1-inch strips; set aside. Heat the oil in a wok or heavy pan. Add the vegetables and ginger, and saute for about 5 minutes.
  2. 2) Add the seaweed and water and bring to a boil. Half cover and simmer for 15 minutes.
  3. Remove from heat. Mix the miso with a little of the soup, then stir it into the pan.
  4. Serve at once, garnish with the parsley or cilantro.
