Description
Kugela recipes-- several variations of them, in fact, have been in my family for years. We often serve it with other traditional Polish foods for Christmas and Easter.

| Ingredients |
- 5 lbs. red skin potatoes, finely grated
- 1 lb. bacon, diced
- 1 large onion – finely chopped
- 1/2 cup flour
- 1 large can evaporated milk
- 5 eggs
- Salt and pepper to taste

| Preparation |
|
No prior preparation is required.
|
| Instructions |
- Preheat oven to 375 degrees.
- Fry bacon pieces until crisp and remove bacon from pan. Reserve 1/2 of drippings and set aside. Fry onions in remaining pan drippings until translucent.
- Mix reserved bacon drippings, bacon, cooked onions, grated potatoes, flour, evaporated milk, eggs, salt and pepper until combined.
- Pour into a greased 9 x 13 inch pan. Bake for 1 hour at 375 degrees or until top is just starting to brown. Cut into squares and serve with sour cream if desired.
