Salmon Cakes with Herb Dipping Sauce
1. Heat oil in large skillet or frying pan
2. Combine all ingredients for salmon cakes in large bowl. Mix until well combined. If mix seems dry, add additional mayo.
3. Press mixture into small cakes, about 2 inches round and 1/2-3/4 inches thick.
4. Fry until crispy brown, about 3-5 minutes per side
5. Remove from oil; drain well on paper towel
In separate bowl:
1. Combine mayo, herbs, and lemon juice to make dipping sauce. Mix well.
Serve cakes immediately, with dipping sauce. Makes a great appetizer, too!
