Easy Southwest Chicken Enchiladas

Ingredients
  • 2 (.5-oz) cans Swanson White Chicken in water
  • 8 oz. Chunky salsa, divided
  • 80z. Cheddar Cheese, Shredded
  • 1/2 C. Sour Cream
  • 1/3 C. Chopped green onions
  • 6 (6-inch) Flour Tortillas
Preparation
  1. n/a
Instructions
  1. Cook Chicken in 1/2 cup salsa in skillet on med-high.
  2. Heat until cooked through.
  3. Stir in 1 Cup Cheese, sour cream and most of the onions (save some for the top).
  4. Place 1/2 Cup chicken mixture on center of each tortilla, roll up.
  5. Place seam side down in a 12 x 9 baking pan.
  6. Top with remaining salsa and onion.
  7. Sprinkle Cheese on top.
  8. Bake at 350 for 20-25 mins.
  9. *can increase recipe to make more.
