Adobong Manok (Chicken Adobo - Philippines)

Description
This is a Filipino recipe for a great chicken dish. Best Served with Jasmine Rice.
Ingredients
  • 1 kg. Chicken (cut into serving pieces)
  • ½ cup vinegar
  • ½ cup soy sauce
  • 1 clove garlic, minced
  • 3 potatoes (chopped into large cubes)
  • ¼ tsp salt
  • 1 tbsp. sugar (use more or less depending on how sweet you like it)
  • ¼ tsp. ground pepper
  • 1 bay leaf
  • 10 pcs. Peppercorns (whole or roughly ground)
  • 1/3 cup cooking oil
Preparation
No prior preparation is required.
Instructions
  1. Combine all ingredients in a saucepan and let stand for 30 minutes.
  2. Simmer and cover lightly for an hour or until meat is tender.
  3. Drain and set aside sauce.
  4. Heat cooking oil in a skillet.
  5. Reheat sauce for a few more minutes.
  6. Pour sauce over meat and serve.
