Enchilada Stuffed Shells

Description
From Taste of Home Quick cooking magazine Jan/Feb 2004 This is a great meal. I normally double the recipe so we have leftovers. When I put the shells on the plates, I add a little sour cream and enchilada or taco sauce.
Ingredients
  • -15 uncooked jumbo pasta shells
  • -1 lb gr turkey or beef
  • -1/2 tsp minced onions
  • -1/4 tsp basil
  • -1/4 tsp oregano
  • -1/4 tsp cumin
  • -1/2 refried beans
  • -1 cup shredded cheddar cheese
Preparation
  1. Cook pasta according to package, drain. In a nonstick skillet, cook turkey or beef over medium heat until no longer pink, drain. Stir in enchilada sauce, seasonings, and refried beans, set aside.
Instructions
  1. Place a rounded teaspoon of the meat mixture in pasta shell, then place in an 11-in x 7-in x 2-in baking dish coated with non-stick cooking spray.
  2. Cover and bake for 25 minutes in a 350 degree oven.
  3. Uncover and springle with cheese.
  4. Bake 5 minutes longer or until cheese is melted.
  5. One serving (3 stuffed shells) equals 379 calories

These are really good. They take a little bit of time to stuff the pasta, but its worth it.

I tried this last night and it was great. I accidentally forgot to buy refried beans but it tasted great anyway!

I also put the cheese on when I started baking it and then added a little more cheese just before it was done.
