| Enchilada Stuffed Shells |

From Taste of Home Quick cooking magazine Jan/Feb 2004
This is a great meal. I normally double the recipe so we have leftovers. When I put the shells on the plates, I add a little sour cream and enchilada or taco sauce.

| Ingredients |
- -15 uncooked jumbo pasta shells
- -1 lb gr turkey or beef
- -1/2 tsp minced onions
- -1/4 tsp basil
- -1/4 tsp oregano
- -1/4 tsp cumin
- -1/2 refried beans
- -1 cup shredded cheddar cheese

| Preparation |
- Cook pasta according to package, drain. In a nonstick skillet, cook turkey or beef over medium heat until no longer pink, drain. Stir in enchilada sauce, seasonings, and refried beans, set aside.

| Instructions |
- Place a rounded teaspoon of the meat mixture in pasta shell, then place in an 11-in x 7-in x 2-in baking dish coated with non-stick cooking spray.
- Cover and bake for 25 minutes in a 350 degree oven.
- Uncover and springle with cheese.
- Bake 5 minutes longer or until cheese is melted.
- One serving (3 stuffed shells) equals 379 calories

There was another one I was going to make by the "Lunch Lady" and now I can't find the recipe anywhere....I had it all printed out and I think some critter stole it off my desk!

I tried this last night and it was great. I accidentally forgot to buy refried beans but it tasted great anyway!
I also put the cheese on when I started baking it and then added a little more cheese just before it was done.
