Gramma's Sweet Pickles

Description
Wash & Slice (1/2 inch) pickles into a crock. Pour solution of 1 pt. Salt (not iodized) to 1 gallon of water over pickles to cover. (may take more than 1 or 2 gallon solution) Let stand for 1 week.
Ingredients
  • (Cover with boiling mixture as follows:
  • 2 1/2 c. Vinegar
  • 8 c sugar
  • 2 T celery seed
  • 10-12 sticks of cinnamon
  • Green food coloring
  • Pour this over pickles and let stand for 24 hours)
Preparation
  1. Pour off liquid. Pour on clean boiling water to cover. Let stand 24 hours.
Instructions

  2. Pour off liquid. Pour on clean boiling water to cover. Let stand 24 hours.
  3. Drain off.
  4. Cover with boiling water containing 2 T powdered alum. Let stand 24 hours. (if any pickles become very soft or moldy, discard only affected slices.)
  5. Drain off alum solution.
  6. Cover with boiling mixture as follows:
  7. 2 1/2 c. Vinegar
  8. 8 c sugar
  9. 2 T celery seed
  10. 10-12 sticks of cinnamon
  11. Green food coloring
  12. Pour this over pickles and let stand for 24 hours.
  13. Drain and heat to boiling and pour back over pickles each day for 4 days.
  14. These will keep in a crock without sealing as long as covered with liquid. Or place pickles in clean jars and cover with boiling liquid and seal.
  15. Process in hot water bath if desired.
