Mexican Spaghetti

Description
This recipe was perhaps the top favorite in our family decades ago, and indeed was quite popular in the school cafeterias of eastern Wisconsin during the 1960’s where I grew up. It appeared in a cookbook published in 1960 by the Porter-Scarpelli Macaroni Co. titled Specialties of the House: Cook Book of Durum Wheat Main Dishes. However, our collective family memory puts this dish on our dining table earlier than that. Obviously Mexican spaghetti is a misnomer and perhaps can be attributed only to the inclusion of tomato and green pepper. Here is the recipe as presented in the 1960 cookbook
Ingredients
  • 2 cups ground ham (Mom preferred a smoked daisy ham or Boston Butt because of the higher fat contact which she believed gave it better flavor and +the casserole remained more moist.)*
  • ½ cup ground green pepper*
  • Salt, pepper to taste
  • 2-1/2 cups whole canned tomatoes (1 pound-4 ounce can)
  • 8 ounces elbow spaghetti (elbow macaroni does not work as well in this reciepe)
  • 1 15-ounce can peas
  • 1 cup cubed Colby or cheddar cheese
Preparation
No prior preparation is required.
Instructions
  1. Sauté ham and green pepper in large frying pan. Put tomatoes in large, greased baking dish, squeezing them gently with your hand to break them into pieces. Cook spaghetti in boiling, salted water until tender. Drain. Stir sautéed ham and green pepper into tomatoes. Add spaghetti, peas and cheese. Bake in slow oven (325 degrees) 20 to 25 minutes or until bubbly. Stir at least once during that time. Makes 4 to 6 servings.
