Chocolate Crazy Cake with Cooked Fudge Frosting
Cake: Sift 3 c. of flour, 1/2 c. cocoa, 2 c. white sugar, 2 tsp. baking soda and 1 tsp. of salt in a large bowl or right in the cake pan. Make three holes in the mix. Pour 2 tsp. of cider vinegar in one, 2 tsp. of vanilla extract in the second, and 10 tbs. melted butter in the third. Pour 2 c. lukewarm water over all and mix well by hand until smooth. Pour into an 11" x 13" pan and bake at 350 for 35 minutes. For cupcakes, bake for 20 minutes. Makes 2 1/2 doz. cupcakes.
Cooked fudge frosting: Melt 1/2 stick of oleo in a pan. Add 1 tsp. of vanilla extract and 3 tbs. of cocoa and stir until melted. Mix in 1/4 cup of milk and heat up. Stir in 1 lb. of powdered sugar or more until frosting is thick but still able to pour out. Quickly pour the frosting over the cooled cake. Allow it to cool and then enjoy my favorite recipe from my mom!
