Lemon-Pepper Cheese Wheel

Description
Lemon and pepper subtly season this savory cheesecake of Swiss and Parmesan, perfect for a sophisticated first course or as an appetizer.
Ingredients
  • 1 pkg. (10 1/4 oz.) Pepperidge FarmŽ Hearty Wheat crackers
  • 3 pkg. (8 oz. each) cream cheese, softened
  • 4 eggs
  • 1/2 cup milk
  • 1 cup shredded Swiss cheese
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, chopped
  • 1 tsp. grated lemon zest
  • 1/2 tsp. freshly ground black pepper
Preparation
  1. Preheat oven to 350
Instructions
  1. 1 pkg. (10 1/4 oz.) Pepperidge FarmŽ Hearty Wheat crackers
  2. 3 pkg. (8 oz. each) cream cheese, softened
  3. 4 eggs
  4. 1/2 cup milk
  5. 1 cup shredded Swiss cheese
  6. 1/4 cup grated Parmesan cheese
  7. 2 green onions, chopped
  8. 1 tsp. grated lemon zest
  9. 1/2 tsp. freshly ground black pepper
  10. PREHEAT oven to 350°F. Crush 20 crackers in plastic bag with rolling pin. Spread evenly in 9" springform pan. PLACE cream cheese, eggs and milk in food processor bowl. Cover and process until smooth. Add Swiss cheese, Parmesan cheese, onions, lemon peel and pepper. Cover and process until blended.* Pour into prepared pan. BAKE 1 hr. or until golden. Cool in pan on wire rack. Cover and refrigerate at least 4 hr. or overnight. Serve with remaining crackers. Serves 16 as an appetizer.
