- 1/4 cup butter, softened
- 1/4 cup Swanson Extra Virgin Coconut Oil
- 1/2 cup Swanson Fructose (plus a bit for sprinkling on top of the cookies)
- 1/2 cup YS Organic Bee Farms Clover Honey
- 1 egg
- 1 teaspoon vanilla
- 1-1/2 cup unbleached organic flour
- 1/2 cup organic coconut
- 1/4 cup Swanson Organic Milled Flaxseed
- 1/2 teaspoon baking soda
- 1/2 teaspoon Swanson Ultra Himalayan Crystal Salt
- 1/2 teaspoon ground cinnamon (plus a bit for sprinkling on top of the cookies)

| Instructions |
- Heat the oven to 375 degrees. Beat butter, coconut oil, fructose, honey, vanilla and egg in a medium bowl on medium speed, scraping bowl constantly, until smooth. Sift in flour, baking soda, salt and cinnamon. Add coconut and flaxseeds. Roll a teaspoon of dough into a ball and place on an ungreased cookie sheet. Bake for 5 minutes. Remove from oven and gently flatten cookie with finger tips or bottom of a glass. Sprinkle the tops with a mixture of the reserved cinnamon and fructose. Return to the oven and bake an additional 2 to 4 minutes or until a light golden color. Let stand 3 to 5 minutes on cookie sheet. Then remove with metal spatula and cool on a wire rack. Makes 36 cookies.
