Thumbs up Goats Milk Fudge

Description
Goat Milk Chocolate Fudge Recipe
Ingredients
  • A Candy Thermometer
  • 2 C. Sugar
  • 2 1/2 Squares Baking Chocolate
  • 1 C. Goat Milk
  • 1/4 tsp. Salt
  • 1 C. Nuts-Chopped opt.
  • 1 tsp. Vanilla
  • 1 T. Goat Butter
Preparation
  1. 1. Mix the sugar,chocolate,goats milk and salt in a heavy sauce pan. cook over Med. heat,stirring constantly.
  2. 2. Bring to 236 Degrees F on a Candy Thermometer or to soft ball stage (A Few drops dribbled into cold water can be formed into a soft ball).
  3. 3.Remove from heat, add the nuts,vanilla and goat Butter.Beat until thick and creamy
  4. 4.Pour into a butter dish and cool. cut into Squares.

I don't believe I've ever had goat's milk.. is there any advantage to using it over regular milk?

Never had goat's milk before either. I'm guessing it may have somewhat of a different flavor it adds to the fudge?

Goat milk is similar to cow milk, in its basic composition. In average, cow milk contains about 12.2 dry matter (3.2DE9E:0001protein, 3.6 fat, 4.7lactose and 0.7mineral matter). So does it basically taste the same as cow's milk then?
If a recipe calls for Goats Milk does it really matter if you just use cow's milk?

The article claims that what you put in the goat, comes out of the goat. Just like anything else, the flavor of what the goat eats is going to come out in the flavor of the various products of the goat. If you feed it a corn based diet, you'll end up with a really fat goat, but the milk may be sweeter. If you feed your goat tin cans, the milk might have a rusty flavor.

Here, you'll see a goat eating a tree. Don't be surprised if the milk from this goat has a "woody" taste to it.

I think the fudge would have a more buttery flavor. Probably a creamier texture, as well.



It looks really smooth. Butterier. I'd kinda like to spread some on a piece of Rye bread with sardines in mustard sauce.

According to the linked article, goats milk is just a tad bit richer in milk fat (lactose). A weight loss aid it is not.
