Amish Peanut Butter Custard Pie

Description
On a trip through Indiana, my husband and I stopped at a restuarant for lunch and all they had for dessert was one slice of this pie. I told the waitress it didnt' sound too good so I would pass on the pie. She told me she would not charge me if I didn't like it, so I tried a bite and it was so delicious, I asked for the recipe! I make this pie for family gatherings, and it has actually become a tradition by now - my 3 sons love this pie and make it themselves now that they have their own places. It is important to use the exact ingredients and do not substitute anything. Organic will turn out best. Compliments guaranteed.
Ingredients
  • Two pre-baked pastry crusts
  • 1 cup powdered sugar
  • 1/2 cup Creamy peanut butter
  • 4 cups organic whole milk
  • 3 Organic egg yolks (you will not need the whites)
  • 1 and 1/3 cup granulated sugar
  • 1/2 cup cornstarch
  • Pinch salt
  • 1 teaspoon vanilla
  • Real whip cream for topping
Preparation
No prior preparation is required.
Instructions
  1. Bottom layer: Mix 1 cup powdered sugar and 1/2 cup creamy peanut butter
  2. Form small crumbs and line 2 baked pie shells with it.
  3. Add vanilla pudding:
  4. On stove, scald 3 cups milk and set aside.
  5. Mix in another pan on stove:
  6. 1/2 cup corn starch
  7. 1 and 1/3 cup sugar
  8. pinch salt
  9. 1 tsp. vanilla
  10. 3 egg yolks
  11. 1 cup cold milk
  12. Start cooking this on the stove, and add scalded milk as you cook, stirring constantly so it will not scorch. It does burn easily. Cook until this is thick.
  13. Pour hot mixture over top of peanut butter layers, chill and cover with real whipped cream.
  14. This is very tasty still warm. Must be consumed within a day or two or it will start to separate, but will still be delicious.
