Fast Peanut Butter Cookies

Description
These peanut butter cookies are a snap to make, and no flour is required!
Ingredients
  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
Preparation
No prior preparation is required.
Instructions
  1. Preheat oven to 350 degrees. Combine ingredients and drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 8 minutes. Let cool for 2 minutes before removing to a wire rack to cool completely.

YES! These are really, really good! We've been making these for a couple of years now.

My recipe is a tad different in baking as it calls for a 375 oven at 10 minutes, if one makes walnut sized balls and then schmooshes (a highly technical baking term) in a cross mark pattern with a table fork; you know, so they look like 'regular' peanut butter cookies.
The most cookies I have gotten out of a batch is 18.

Also, I have found that if the 'batter' is a bit 'messy', let it rest for a few minutes and then one can form the walnut sized balls just fine without it sticking to one's hands or the fork.

"REAL" peanut butter (just ground peanuts & salt) works best and tastes best; there are at least two brands of this type of peanut butter in my local IGA.

One of the keys to this recipe is to not overbake. With all the sugar in the recipe, the cookies can quickly scorch. It's better to leave them a little underdone when you take them from the oven, and let them harden on a wire rack.
