From my experience, I find the fruits with the most pectin are the best to dry.I also enjoy dried apricots. You can dry preserve most any fruit or vegetable you'd like. Green Peppers are good too, but come out tough. And, of course, Mushrooms. All fruits are good. The ones that have a watery texture are the slowest to dry, citrus, and what not. Tomatoes (which are a fruit) are good for dehydrating. A powder is made, and best used in soups and stews. My dehydrator came with a sheet accessory that allows a liquid to be dried into a powder. That sheet can also be used to dry fruit puree for the fruit leather.
