I know I've burned or overcooked things because I walked away or was distracted by something else. Usually the unwatched pot boils over, but that doesn't hurt the food. Just makes a mess.
Back when I was in high school I misread a recipe for homemade crackers. I put in way more salt than it called for. No one wanted to eat those.
I know I've done my share of grabbing the wrong ingredient or measuring something wrong a few times. Who hasn't done that when in a hurry?
Sometimes doughs don't rise as much as they should or other times ingredients don't whip up nice a fluffy for one reason or another.
I've had troubles making homemade toffee a while back. First time I made the recipe it was awesome. After that I couldn't get it to work even though I tried many things like different brands of sugar, margarine vs. butter, different candy thermometer, different kettle, stirring a little vs. stirring a lot, you name it. I even asked around if anyone knew what was the problem. No one could tell me. Then I found a recipe that says not to keep stirring after a certain point otherwise you push the hardened sugar on the sides of the kettle back in the mixture. Maybe that's my answer there. I have yet to try it yet. The only difference is the first time I made it was on an electric stove. I own a gas stove. I can't really do much about that difference.
