While doing some Urban Hiking, I was lucky enough to locate a bush of Currants, growing in the front yard of a vacant house. Looked as though the berries hadn't been harvested for the entire growing season. I changed that. I found a container that had been discarded along the way, and used it to hold the berries that I went about harvesting for the good of the cause.
After washing and gleaning the stems and other debris from the two cups or so of berries, I went about cooking them down into a nice sauce for the pork chops I planned for my evening meal (supper).
The sauce turned out to be rich and flavorful.
To the 2 cups of berries, I added 2 cups of water, which, for the most part, cooked away, and a 1/2 c. of white sugar, which thickened the sauce nicely. 1/4 cups each of soy sauce, Worcestershire sauce helped reconstitute the berry sauce. I then added 2 tbsp. of lemon juice,and 2 tsp. black pepper. I let the concoction simmer for a half hour. I transferred the sauce to a suitable container that would facilitate a stick blender. As I worked the blender, I noticed the itsy bitsy seeds were not effected by the device.
The sauce turned out so good, that I smeared some on some ice cream, just to test it out. I realized the sauce was just a tad too thick, so I added another tbsp. of water.
I'm perplexed with the seeds, as I can understand how they might be troublesome for those that wear a dental prosthetic or 2. My concern for the seeds being a detriment, I now have something else to brainstorm. How to get all those little seeds out of the sauce.
I'll get back to youse all on this matter. If anyone has a suggestion as to how to remove these little devils, feel compelled to comment.
