Currant Sauce

While doing some Urban Hiking, I was lucky enough to locate a bush of Currants, growing in the front yard of a vacant house. Looked as though the berries hadn't been harvested for the entire growing season. I changed that. I found a container that had been discarded along the way, and used it to hold the berries that I went about harvesting for the good of the cause.

After washing and gleaning the stems and other debris from the two cups or so of berries, I went about cooking them down into a nice sauce for the pork chops I planned for my evening meal (supper).

The sauce turned out to be rich and flavorful.

To the 2 cups of berries, I added 2 cups of water, which, for the most part, cooked away, and a 1/2 c. of white sugar, which thickened the sauce nicely. 1/4 cups each of soy sauce, Worcestershire sauce helped reconstitute the berry sauce. I then added 2 tbsp. of lemon juice,and 2 tsp. black pepper. I let the concoction simmer for a half hour. I transferred the sauce to a suitable container that would facilitate a stick blender. As I worked the blender, I noticed the itsy bitsy seeds were not effected by the device.

The sauce turned out so good, that I smeared some on some ice cream, just to test it out. I realized the sauce was just a tad too thick, so I added another tbsp. of water.

I'm perplexed with the seeds, as I can understand how they might be troublesome for those that wear a dental prosthetic or 2. My concern for the seeds being a detriment, I now have something else to brainstorm. How to get all those little seeds out of the sauce.

I'll get back to youse all on this matter. If anyone has a suggestion as to how to remove these little devils, feel compelled to comment.

Not a bad plan, just seems too easy.

As for the cheese cloth idea,

1. I didn't have any on hand.
2. I believe it would have left some 'cheese cloth debris' in the sauce.

I'll figure something out. I have a super fine sieve that might work. The sauce is kinda thick, and a small amount of diluting won't hurt. I could use some bourbon or scotch as a sauce thinner. Perhaps even brandy!

Yes indeed...the super fine sieve worked out very well. Turned out that I didn't need to dilute the sauce, and it smeared on the pork chop just as the king would have it.

However, I do believe some dilutionary action would be required if I chose to serve the sauce on ice cream. Brandy would most likely make for a well fitting candidate.

As for diluting the sauce with brandy, I used splashed a bit of scotch whiskey.

Cognac may be a good thinner, as well as those mentioned.

Never a dull moment.

The raspberries are ripe and ready to be picked. The bush across the street was picked over by the time I got there, but there were a few left for me. I picked those, and cleaned and cooked them in much the same way as the currants were prepared.

After deseeding the raspberry sauce, A added it to the bit of currant sauce I had left.

Really good as a sauce on chicken or pork, and of course, Ice Cream.

Hmmm... I wonder about maybe planting some raspberry and currant bushes. I wonder how long until the bushes start to give a decent yield, also are birds a huge issue or a minor nuisance? Something to look into, I guess.
