Hi! I’m new to the Bubbler and wanted to share some info with you - I messaged MrKhay and he said it was ok if I started a thread.
Some of the best holiday recipes call for raw or undercooked eggs (eggnog, anyone?), which can be tricky and risky to make. And with family members crowding the kitchen to sample the cookie dough and eggnog—you don’t want any of your loved ones getting sick from salmonella!
Never fear, Safe Eggs are here! I’m working on behalf of Safest Choice Eggs, and I wanted to let you know that they are a great alternative to regular eggs. They are pasteurized (kind of like milk) to ensure that they are safer than your average egg. Safe Eggs have all of the same nutritional value, look the same, and definitely taste the same – the only difference is that they’re much safer to eat!

I do remember growing up before we knew the dangers of raw eggs and we always could not wait for my Mom to give us the bowl when she was done with it so we could lick it clean. lol Well, with our spoons actually.
I really loved Chocolate Chip cookie dough and sometimes think I ate as much raw as baked at times. lol
I have no idea how we didn't get deathly ill with all the raw eggs we must have devoured over the years. But I can say you won't catch me dipping in the bowl while baking anymore and my kids will never have that memory.
But then again...maybe with the safe eggs? I will totally check it out.

Reminds me of this frosting recipe that my mom has and it's such good frosting, too. It has a raw egg in the frosting and as a kid I don't remember refrigerating the cake with it on. No one ever got sick.
Then there's the caramel apple salad I made last year that had a raw egg in it. My mom said I should have used Egg Beaters in it. She's correct there.
As you can see we live dangerously so pasteurized eggs make sense.

We love store bought eggnog and would love to learn how to make our own. Eggnog is so expensive in the stores.
Well, here you go!
---------------------------- Classic Egg Nog
12 pasteurized shell eggs
1 lb. confectioners’ sugar
½ teaspoon salt
¼ cup vanilla
4 cups evaporated milk
2 cups heavy cream
Serves: 10 - 12
Break eggs into large bowl. Beat eggs until light in color. Mix in confectioner’s sugar, salt and vanilla. Add evaporated milk. Blend with egg mixture for 30 seconds. If desired, add in 4 cups dark rum, brandy, bourbon or rye. Cover nog closely and let ripen in the refrigerator for 24 hours.

That is kind of scary. I'm really glad no one got sick! The caramel apple salad you mentioned sounds really good, would you mind sharing the recipe, or is it a family secret? ;-)
I did find a recipe for another caramel apple salad that uses no butter or eggs so I think I should give that a try. Might save a few calories. It uses butterscotch pudding for the caramel flavor.

Like you were saying earlier (along with pk), I loved eating the cookie dough, and I was crushed when my mother decided to stop letting us kids have it because of the raw egg concern. Now-a-days, with pasteurized eggs, I'll make a batch with no intention of putting it in the oven!
The eggs are also good for homemade salad dressings and mayo. Have you guys ever tried making those?

P.S. Washing an egg will not remove the salmonella. The bacteria are inside the egg. Did you guys know that?
