You could just roast them (we did and they were delicious) or .. as this article suggests:

Often called pepitas in grocery stores, pumpkin seeds are heavyweights in the nutrition department. One ounce of these nuts has 10% of your DRI of iron, 30% of your DRI of magnesium, and 25% of your DRI of zinc.

I like to fry them in a little olive oil then add salt, cajun seasoning and chillie pepper

That sounds yummy.

You can also roast squash seeds. I haven't tried it yet, but sounds like a good way not to let them go to waste.

Totally, All of those type of seeds you can roast or fry them. They are amazing and a fun and not fattening snack to munch on
