Colby cheese has a variety of uses but because it's so mild, it's rarely used in cooking. Colby is a cow's milk cheese and used most often a table cheese, grated, grilled, or in snacks and salads.
Developed in 1874 by Joseph F. Steinwand at his father's cheese factory near Colby, Wisconsin, Colby cheese was named after the village and remains a favorite today amongst cheese lovers everywhere.
