It's going to be one of two things. Either I'm making this turkey shortcake recipe with all my leftover turkey or I'm making this southwest tamale pie that I picked up at a store.
The turkey shortcake is good. You make a giant biscuit that ends up getting cut up into single size servings. Then a creamy sauce with turkey goes over that.
I beginning to think I will just go with the tamale pie since I've had turkey about 5 times in the last week.

There used to be a restaurant in NY that served the best chicken ala mode in a huge serving. I'd almost move back there just to eat that if they hadn't since gone out of business.

Dinner tonight...we had some small steaks my son was going to help cook for tonight but not sure now. We plan on going to the Wisconsin's largest drive through Christmas display up by Waukesha? Not sure. My oldest daughter has it all planned and I just ride a long. lol (I almost forgot about it)...But not sure if we have time to cook first. That's how our dinners usually go around here lately especially with the kids home. We always have something going on.
Simple night tonight. Smoked pork chops, mac and cheese, veggies and a big glass of water. Haven't bought smoked pork chops in years so when I saw them on a good sale they just sounded good, and they were really good.
Was planning to have spaghetti.. opted for fish, corn, and rice instead..
Fish sounds good. Made it last Friday and hope to have it again soon. Love to just season it with Greek seasonings I have and pan fry in a little oil. We usually use tilapia fillets. Cat fish fillets are my favorite though but I love the thick kind that usually costs to much.
It's hard to find cheap fish much anymore. Then if it's cheap it's probably from China and full of toxic chemicals. You can't win. I may need to move down by Toes to get the fresh seafood. LOL
For supper we made venison stew. We ate bread with it.

I make you a deal. You can go down during the summer months since you like the heat and send the fresh fish and seafood up to us. Then in the Winter months I will go down and send them up to everyone. Sound like a plan to you?

I'm not going to Florida in summer. I don't like heat and humidity that much. That would remind me too much of my factory days. Actually I was in Florida once in summer. I don't remember it being that bad but that was probably because it was August and I was used to it by then.
Made spaghetti tonight and have to say it turned out really well..

Do you cook a different meal every night? I was just asking because we don't with all the leftovers we get from a meal. I usually only plan on making 3 meals for the week.

I like to make a bigger meal and then make mini meals out of it to stretch it out. Such as a ham and then cut the leftovers up for later meals. You can do so much with ham leftovers. Casseroles, egg dishes, diced in a big salad, navy bean soup, the list goes on. Chicken is a good thing to stretch out too.
I actually like making more than just enough for one night. Sometimes after the meal sits for a day or two I find it tastes better.
I do that too with leftover things. Make it into a whole new dish. I also do clean out the fridge soup. Whatever meat, veggies, sauces and gravies are in there can be made into a soup. You usually have to add additional ingredients, but it beats wasting leftovers.
The less times I have to cook a whole meal each week, the better.
I usually give my leftovers away to a neighbor.. not always, but usually.
In fact, my neighbor had some of my spaghetti for breakfast this morning..
And yep, put sugar in the sauce to cut the tomato taste.. but just a bit, not a whole cup!

Sounds yummy. I love spaghetti especially the next day leftovers.
My ex use to say leftover spaghetti is like yesterdays news... I tend to agree when he made spaghetti because he mixed the sauce & noodles in the same pan. I cook the noodles & keep them seperated from the sauce, this way the leftovers are just as good as the first day.
