I decided to go with fish tonight since we just had chicken twice in a row. We don't need a third time. I found 2 recipes that I have the ingredients on hand since I don't want an extra trip the store.
I think I'll make one of the potato recipes I haven't tried yet. Whatever I have on hand. Maybe I'll make American fries.
Well my daughter just informed me that she wont be home for dinner tonight, so I must fend for myself. I wont make tacos if I'm the only one home. making the shells takes a while & when it's just me, I will eat anything quick & easy. thinking I will hit the store on the way home & find something quick.
It's the mayo on corn that grosses me out. My ex use to mix mayo in his cream corn & wouldn't eat it any other way... ick ick! He also put mayo in his mac & cheese instead of butter.
I like mayo, but on corn? I don't know if I'd like that. I prefer it on sandwiches.
My fish recipe was super easy. I think it took longer to remove the fish from the plastic than to prepare it. I just put the fillets in a pan, sprinkled with parmesan cheese and dill. Then throw it in the oven. I also made this carrot, parsnip and potato medley. Just slice them up in the food processor and fry in a skillet with some seasoning and a little butter.

i was thinking for breakfast to slice up leftover bbq chicken, scramble some eggs and put in a tortilla with some cheese. Just trying to get rid of the leftover chicken and that sounded good. Breakfast tacos.

I hate when something I make is too spicy. I can't eat strong hot spices. My kids love spice, the hotter the better but I won't eat anything that hurts my mouth! lol

I might make some popcorn to have while watching a movie here in a bit. We had a late lunch at the Chinese buffet in Platteville and we ate way too much there so we're not very hungry.
Pork Chop (boneless) on the George Foreman grill. Rice pilaf, sweet potatoes (yams) and some pickled beets. Maybe some peas or corn. A veggie mix is also a possibility.
