Had to go to Waukesha tonight so we ate at Senor Tomas in Hartland. I had a chicken poblano burrito with this mole sauce that was so good. It came with fried plantains. My husband had an enchilada with chili on top and some jalapeno cornbread.

I made chicken fettuccine for supper tonight.

Tomorrow I'm making chocolate cupcakes with pink frosting and large candy hearts on top to take to my genealogy meeting. I'll probably "graze" on snacks there and then will stop in at the American Legion after so won't be making any supper.

Wasn't to hungry last night and only had to cook for myself so it was scrambled eggs with cheese melted over the top and some kind of grain bread toasted.

I came home to turkey and sweet potatoes that my husband made. mmmmm so good! Made some green beans with cheese sauce on to go with. Not quite thanksgiving with all the trimmings, but still so good. All that was missing was the dinner rolls, stuffing, cranberry sauce, and pumpkin pie. Did I miss anything?

I want to make something with the leftover turkey like a turkey tortilla soup. Have to look at my recipes.

Have you every tried lasagna cupcakes? Sooo good and 2 with a side salad will fill you up. Under 500 calories for complete meal.

Can't go wrong with lasagna. Yum!

We'll be eating leftovers for the rest of the week. Lots of turkey left and some sweet potatoes. BBQ pork and fish from Texas Roadhouse and a bunch of other things filling up my fridge. I like not having to cook for the rest of the week.

I slept all afternoon & woke up to find my bf & my daughter had gone to dinner so they wouldn't have to wake me.

I cooked up some steak on the George foreman & made myself a big fat steak sandwich, with lettuce, tomato & muenster cheese. it was good!

Re: What's For Dinner?

Took out some hamburger this morning... feels like a taco night to me Tacos, Mexican rice, refried beans w/chorizo... yeah sounds like a plan!
