Tofu also known as bean curd, tofu has become one of the most popular soy foods available. Its versatility and nutritional richness have made it an essential ingredient in vegetarian cooking. It is extremely high in protein, iron, calcium, and phosphorus, and has very little cholesterol.. There are several varieties available, ranging in texture from silken to extra firm. Firm tofu is the most versatile and best for stir-frying and baking. If you are going to make creamier dishes, choose silken tofu, which has a wonderfully smooth texture almost akin to yogurt. Tofu can be used in many recipes as a substitute for dairy products such as cheese and cream, and because of its neutral flavor can be used in both sweet and savory dishes. Buy the freshest tofu available and check the label to be sure genetically modified soybeans have not been used in its manufacture. Keep tofu covered in cold water in the refrigerator. For health issues, it is best not to eat raw tofu unless you made it yourself; if using it in uncooked dishes, steam the tofu for a few minutes first.

While we were visiting Wisconsin Dells a week ago we stopped in a nice place called the: Cheese Factory Restaurant. It mentioned foods from around the world. It peaked my interest thinking we would have some great choices.

Well, not sure why they called the place "Cheese Factory'? And it was nothing we expected. I got my first hint that something was different when I caught the one item: Rattlesnake Tofu! That was about the time my hubby started laughing and told me to look closer at the menu. No meat.

Well, I was just way to hungry to stay and check out meatless items so we excused ourselves and took off to venture down the road to another place.

I will say though if you like vegan restaurants that serves alot of different dishes with tofu you won't want to miss stopping in to this restaurant when visiting the dells.
