How do you like your eggs?
I like mine over easy, on top of my potatoes - add some ketchup, salt and pepper to taste, and mix well.
Sop up the last with whole wheat, medium toasted, lightly buttered with a modest (but not too modest) amount of strawberry jam (jam, not jelly).
One time in ten or twenty, soak up the last with the last of the side order of pancakes. Yum!

Love a good omelet, too. Musts are green pepper and onion. Desired are mushrooms. Ham and cheese always good choices.

I like the stuff I mentioned because I can actually cook 'em!

Another GREAT way to have eggs: Dutch-oven "Country Surprise". Especially good for winter camping. The eggs are cooked over a base of shredded potatoes in oil. The stuff comes out of the oven in chunks and generally goes down the same way! Make two or three times what you'll think you need if you're winter camping. The weather and the activity combines to build great appetites, and this dish makes for great fuel for the body and soul.

I had an awesome recipe for eggs in an earlier lifetime. Wish I remembered it all. Involved separating whites and yolks, whipping whites, baking, using both...plus cheese of course. Maybe it'll come back to me someday.

UP AND RUNNY...with ketchup and horseradish. Then a pile of onion garlic hash brown potatoes, with some honey and butter soaked rye toast. A generous helping of whole cranberry sauce rounds out my "First Smile" of the day. (I'm single) :wink:
Talking omelet, I need at least 4 eggs, whipped to a froth. Add green and red peppers, onions, mushrooms, olives (black). Smother the entire thing in cheese, and I'm a happy guy...regarding eggs  .

I already had my chuckle when I read the joke section of the forum today. lol
Eggs? Over medium with toast (lightly toasted) with real butter. ummm Add some bacon and small amount of hash browns, crispy.
Omelet? The best, at least 3 eggs whipped, with ham, green peppers, tomatoes, and swiss cheese! Oh, I'm getting hungry!
I also love cowboy skillets minus onions and mushrooms.
I also enjoy a few times a year to go to a local place that makes great omelets with your choice of wild boar, bear, kangaroo, etc.. can't think of all the choices right now. But I usually only get the boar, taste like ham.
But best eggs of all?? The ones my hubby or daughter makes for me so I don't have to cook!
