Pickled Beets
Some folks like to call them marinaded beets...I call them pickled. I Make my brine with equal parts of sugar and water, with double the cider vinegar. I then add some peppercorns, a bay leaf, pickling spice, mustard seeds, dill, and some onion.
In the meantime, I blanch the beets, and slip the skins off. I like to chunk the beets, but you can slice them too. If the beets are small, just pickle them whole.
After the brine cools, I refrigerate it for 2 days. Then I fill as many jars as I need with some of the beets. and pour the brine over them, filling the jar. Into the refrigerator they go for another week or so, to let the beets soak up the brine.
I like them with about any meal...maybe not with ice cream soup, though.

I'm working on another batch. Cooking the brine smells the place up.
Anyone have any other uses for beets?
I know the brine in canned beets can be used to make beet wine.
What else?

Carol and I agreed on the subject about not liking mushrooms (eck) and now I must agree I also don't care for beets. I totally would have to pass on the beets. lol
The only good thing about beets is the fact that when I see a can of beets I think of my mom. Every Thanksgiving or Easter when she came for dinner I always had to make sure I had a dish of sliced beets out for just her. No one else cared to eat them so there was plenty for her! lol That was great with her since she loved eating them.

Pickled Brussel sprouts??? OK, you are killing me here! If I had to eat this or beets I would have to eat the beets...pickled brussel sprouts?? That just is wrong. lol

I could add to your egg safety thread on the topic of pickled eggs.
You might find a pickled Brussels sprout in your morning bloody mary. Brussel Sprouts are good for what ails you.

Oh gosh oh me oh my......yuck!! Neat memory about your mom though.
Beets are good as a natural egg dye!! Boil the eggs and beats together and the eggs turn a pretty red color

Insert gag graphic here. LOL......... Have to agree with PK here. No mushrooms, beets pickled or not, brussel sprouts pickled or not.....
and defonatly no pickled eggs or sardines.
I dont think I like anything "pickled" (insert gag graphic here ~ lol)
