I have a farmer that comes here every year to pick the morels that grow the back end of my property.

My kids have fun finding the big puff balls. They slice those like big ole steaks, roll them around in some egg white, dip it in a corn flour seasoning mix and fry them in the pan.

I'll be the first to admit it.... I'm a very poor eater. I dont like this and that. I hate fruit, I hate veggies. It's amazing I'm still alive the way I eat.

I'm finicky like a cat!

My kids are good eaters though.......they eat darn near anything. Least they didn't pick up my poor habits.

So how do you tell a poisen mushroom from one that you can pick and eat? Are they different color? Grow in different types of places? Or do you just have to 'know' the many different types before you can feel safe to pick mushrooms.

Not sure if I ever met a person that hates fruit. :?

My youngest son loves fruit so much that I believe if you offered him a large bowl of different cut up fruit or a steak...(he loves steak), he still would pick the fruit.

And veggies. Have you tried all the ways of cooking veggies? Fresh, steamed with a few seasonings can be sooo good. Of course if you don't care about the healthy aspect, battered and fried can be great too.

I really dislike mushrooms but I know my hubby loves them. I mentioned the mushroom store we found in an earlier post. He loved going in there even though we did not know half of what the different kinds was offered. I am sure he would love for me to learn more about mushrooms and how to cook them. (eck) lol

These are shiitake mushrooms that I harvested from my shiitake log. I ordered the log from Amazon.com, when I finally settled into my new apartment, I activated the spores/spawn, and 2 1/2 weeks later, I have these specimens to offer, and enjoy.

The terms ‘mushroom’ and ‘toadstool’ are subjective rather than strictly scientific, and therefore are open to a range of loose interpretations. In general, fungi with fruit bodies that have a cap more or less centrally placed on top of a stem are referred to as ‘mushrooms’, or as ‘mushrooms and toadstools’. Some people broadly consider that all fungi with a cap and stem are ‘mushrooms’, while others consider only edible fungi as ‘mushrooms’. In the strictest sense, the word ‘mushroom’ refers only to members of the genus Agaricus, e.g. the cultivated white button mushroom. ‘Toadstool’ is typically applied to any fungus with a cap and stem that appears different from Agaricus, regardless of its edibility, or more usually if it is suspected or known to be poisonous. In a broader sense, ‘toadstools’ also includes other non-mushroom forms of fungi such as puffballs, earthstars, and coral fungi.



As a mycologist (a botanist with an expertise in fungi), Peter Valder is often asked how to tell the difference between a mushroom and a toadstool.

All can be broadly described as the fruiting body of a fungus.

As there are thousands of different sorts of mushrooms and toadstools, it is hard to easily distinguish one from the other. There are however several pointers that can be used to decide if a fungus is a mushroom and is edible.

The widely accepted methods of being able to easily peel the cap and noticing the colour turn to silver black are not reliable indicators that a mushroom is safe to eat.

As many mushrooms are highly poisonous Peter strongly recommends not eating a mushroom that you find in a field unless you can have it positively identified.
Characteristics of true mushrooms

There are some characteristics to look out for when determining whether a mushroom is likely to be poisonous or edible. The terms used when describing mushrooms are shown in the diagram.

* True mushrooms are usually found growing in open paddocks or lawns and not under trees or shrubs like toadstools.



* The upper part of a mushroom called the 'cap' should be smooth and more or less white with no conspicuous raised scales or warts. Toadstools, for example the dangerous fly agaric (Amanita muscaria), will often have a different coloured cap which has scales and raised lumps on it. The fly agaric is red with white spots.



* The cap of a true mushroom pulls away from the stem as it grows leaving a ring of tissue around the stem. If you can't find a ring of tissue around the stem, it's not a true mushroom.



* The undersurface of the cap of a true mushroom is covered with narrow flanges called 'gills'. In a young mushroom these are pink. As the mushroom matures they turn brown to almost black. Toadstools or poisonous mushrooms have gills that remain white throughout their entire life cycle.



* The gills of a true mushroom are attached to the cap and not to the stalk so when the stalk is removed from its base, the gills stay attached to the cap (see diagram). If the gills stay attached to the stalk then it is not a true mushroom.



* The base of the stem of a true mushroom is narrower or at least no thicker than the rest of the stalk while most of the poisonous mushrooms and toadstools have a noticeably swollen base.

The short answer is, nobody in Wisconsin calls 'em toadstools, unless they're trying to be funny.
As for poisionous shrooms; there is no 'way to tell'. You have to ID them.

Here are a few local badies:

Fly Agarics (another critter name) are very abundant in Wisconsin. The ones around here are mostly yellow to orangeish with white specs on top. They grow in lawns and wood edges around August to September, and can get 10 to 12 inches high, and over 6 inches across. They would make you very sick.

Death Angel: I seen several growing under bushes, in open woods. They are another summer to fall mushroom. These are tall with a narrow stem, and are all white. Pure white. Like an angel, white. Even the gills are white. They will kill you; and not in a nice way, either.

Panther cap: these aren't that common, but I think I saw one in Eau Claire county last august. They are another 'toadstool' with a shiny green cap. Can be deadly, I gather.

LBM's: (Little Brown Mushrooms) There are many kinds of these. Some you can eat twice, some you would only eat once. They range from good, to sickening, to deadly.

The sickener: That's it's name. I didn't make it up. It is a summer mushroom with a red cap. Don't eat them.

You don't have to know the poison ones. You just have to be DAMN SURE of the ID of any mushroom you are going to eat.

Canned mushrooms are that way due to the processing they go through to keep them. Fresh mushrooms are a different story. They are crisp, and have an "earthy" flavor.
