Smoked Beef Brisket
Mix all ingredients for the BBQ sauce together in a disposable aluminum pan at least 3 inches deep (like a turkey roasting pan) and set aside.
Smoke the bell peppers and the brisket at 160 degrees or so for about 4 hours
Remove the brisket from the smoker and cut into 1 inch cubes and place in the pan of BBQ sauce. Slice the peppers and add to the pan.
Return the brisket and sauce to the smoker and continue to smoke for an additional 4 hours or so depending on the heat of the smoker and flavor of the meat.
Stir the brisket every 10 minutes or so. This will create a glazed surface on the brisket cubes. Sample as needed.
Serve on your favorite bun or by itself.
If the smoker is large enough you may want to consider adding a few ears of sweet corn. Soak the sweet corn, husks on, and then place in the smoker for about 4 hours. It goes great with the brisket.
Enjoy!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
