How do you like your eggs?
I like mine over easy, on top of my potatoes - add some ketchup, salt and pepper to taste, and mix well.
Sop up the last with whole wheat, medium toasted, lightly buttered with a modest (but not too modest) amount of strawberry jam (jam, not jelly).
One time in ten or twenty, soak up the last with the last of the side order of pancakes. Yum!

Love a good omelet, too. Musts are green pepper and onion. Desired are mushrooms. Ham and cheese always good choices.

Another GREAT way to have eggs: Dutch-oven "Country Surprise". Especially good for winter camping. The eggs are cooked over a base of shredded potatoes in oil. The stuff comes out of the oven in chunks and generally goes down the same way! Make two or three times what you'll think you need if you're winter camping. The weather and the activity combines to build great appetites, and this dish makes for great fuel for the body and soul.

I had an awesome recipe for eggs in an earlier lifetime. Wish I remembered it all. Involved separating whites and yolks, whipping whites, baking, using both...plus cheese of course. Maybe it'll come back to me someday.
