Well it seems as if there are lots of choices of Tacos. I won't list them all here but this is one I found:
Different types of Tacos:
Among other types of tacos (brain, cheek, etc.)
Asador or the grill in which the following is served: carne asada tacos which are world famous, tacos de tripita or cow intestine tacos (cow intestines also grilled to a crispyness),
Also found this little tidbit:
Tripas, fried beef intestines (not stomach) used in Mexican tacos and burritos....
So there you have one more use of Cow Intestines other than hot dog casing...
